White Oak Hardwood Flooring

My husband and I both like the look of white oak hardwood flooring, unstained, with a matte finish - or at least something close to a matte finish. We have found a local supplier and have been able to actually see the wood that we will purchase. Our builder will sand and finish the floors on site. My question has to do with the type of finish that should go on the floors after they are sanded. What is the best finish to use if we want to maintain as much of the natural color and appearance as possible?

What kind of changes can we expect as the floors age? I know this will depend, in part, on the amount of light that the floors will be exposed to, but in general, will they begin to yellow as they age, or turn more of a light brown?
