This rendering must be way out of proportion. If one is standing at the stove (which is not centered to fan), most people's heads would be as high as the fan and therefore the ceiling must be 15 feet high? Very hard to comment on, given the picture, as these cupboards would be useless and I don't like how they overhang as well, as they feel oppressive and heavy.

Take a very sharp pointed exact knife and remove the excess which is what is showing who ever installed sink should have done that.

Hi, there are a lot of brands with different reviews. what are the brand's suggested by your kitchen vendor? we have recently used Carysil for one of our clients. it's the first time we've used that brand and it is a good one. Another one to check out is kaff, which is more economical.

Yes the height of the platform will be too high if you are planning to keep the dishwasher under kitchen counter as it will be 85cm(dishwasher height) + 5cm ( platform that you wish to have ) + 5cm ( roughly for granite and height between dishwasher and granite )  In total it will be 95cm which will be too high for a granite counter as the standard it should not be more than 85cm . ( that too on higher side ) You can create separate counter for the dishwasher if space allows more over you can share your kitchen layout with us for more detailed discussion . I hope it helps .
