Rough drawing but you get the idea. I prefer to over lamp and then use dimmers so I get even lighting. I prefer 4” cans with 2700kelvin led bulbs installed at the edge of the counters so your body isn’t creating shadows. The sink can will be centered over the sink, the cans over tall cabinets (pantry, fridge) get installed 12-15” off the face. I’m surprised the ceiling is being skimmed, I’m going to assume you have attic access.
