A lot of times you have to make compromises with where to place an oven stack. It's not used as much as the vaunted triangle. Putting it out of the way is fine. While putting it in an area where people come and go is not ideal, it's not a fatal flaw because it's not used as much.
Regarding the refrigerators, I've had both the 36" SubZero refrigerator and freezer units. I loved them. Room for everything. I've also had the two 30" french door SubZero unit side by side. It was okay. I found that I did do a little hunting for where I put something. I kept beverages in one and everything else in the other. What I do hate with a passion is the side by side units of any brand. I've had more salad greens and vegetables frozen and ruined by an adjacent freezer wall.
I agree that you need counter space for a place to dump incoming groceries. While islands look like good places to do this, often stuff comes into the kitchen while I'm cooking and have the island clobbered. See if you can't plan some counter top cabinets on each side of the whichever refrigerator freezer array that you select.
You also need to determine where you are going to put the microwave. The only rule about that other than personal preference is to place it near the refrigerator because that's where the reheating mostly occurs.
Wine storage has little to do with cooking. I'd find an out of the way place for it rather than stacking it next to the refrigerator freezer. The pantry is an option, too. You can buy a less expensive and impressive brand if you put it in the pantry. Don't forget under cabinet storage for wine and beverages as an option. It's a good one.
The rendering that has the island seating on the corner is far more useful than the long counter. If you have a long counter occupants 1 and 4 can't see or converse with one another.
