restaurants use stainless steel counters, and yes, they do get scratched.

We used 16ga stainless. i was there recently (after 3 years in place) and they look great. Only minor scratches. Owners are in their late 60's and very meticulous. Very durable material but can may not be a great choice for an active family with multiple users,

Be careful about using them near windows. The sunlight bouncing off the stainless can be blinding.
