Can you post a floor plan with measurements as it is now?

It looks like you have a split level to one side you have stairs going down and on one side you have the dining room.
Here is my suggestion I would close off the side on the stair side closing that opening and move the range to that wall center it not sure if you have space on that wall for the refrigerator if not move it to the range wall.
Knock out the wall to the dining and have a big island that opens to the dining

I think you're going to have a hard time keeping the cabinets while you rip out a cabinet-covered wall -- there may be unfinished sides, things will need to be rearranged, and matching an island to what you have is unlikely. For sure you need to design the whole kitchen and figure out where things can go before you start -- you may discover that new cabinets will be unavoidable in order to make everything fit into the reconfigured space. Try us here, but I suggest time with a professional kitchen designer too -- even a free session someplace like Lowes might give you a much more concrete sense of the issues.
