Correct. Mosaic pencil tile is very trendy and is out. Porous tile is a lot of work, which is what marble is. And that tile from that picture would look awesome!! I like that the grout blends with the tile but not totally. Try something like that and see what you think. I would stop it at the end of the upper cabinets. See what they have for edges. You may have to do a Schluter edge and that has to go on first.

are we looking at the others elements too? will that be your backsplash? the marble water jet swirl? What about your flooring? what will it be? that other grayish-white piece ? if doing a marble splash, then you want a quartz that looks very similar. this one is Cambria Torquey w/carrara backsplash below, caesarstone Nougat and Cambria Roxwell
