Big nope to marble. Stains.
Some people get all romantic about it, but it sounds like it sucks. It stains and patinas. Patina is oil based which smooths and darkens the stone and comes from years of hand and cooking oils. Stains have all sorts of colors. Think pink, blue, red, purple, orange, green, and on and on. In my mind, it ends up looking like a chaotic mish mash.
An alternative to both marble and granite is soapstone or slate. Both are non-porous, 100% stain resistant and develop an utterly gorgeous patina. They are softer, so the round and shape with age, too, whcih lends the counter top and super cool look.
Check out Fantasia soapstone. It is light, airy, and has beautiful white veins with ethereal green accents. We just installed it in our new kitchen and positively love it!
By the way, the sink is slate and is freaking amazing. Incredibly easy to clean, stain free, and looks amazing.
