Len, this is somewhat I had in mind for your guest bath. Since you have a cabinet under your sink I would put the first shelf even with the sink and put a large tile on it. My experience with anything next to the sink is that it will always get wet and look bad after awhile. Plus tile is slick and easy to clean especially if big.
The wall would have to be tiled in order to wipe it clean. No fan here.
I have drawers over my stools and they work just fine.

counter contrast is fine except all dust, flour etc. would show.
Now this shelf would be useful, but always cluttered.

I have this pull out shelf in the loft for my sewing things. It is helpful and goes out of the way and is not noticed.
