Regarding aisle widths...Aisle widths are measured to/from the items that stick out into the aisle the farthest. They are not measured cabinet-to-cabinet.
Counters overhang cabinet boxes by 1.5". Most contractors do not understand this. If there's an appliance or deeper wall/cabinet on the aisle, then you measure from that item on that side.
E.g.,
Cabinet-depth refrigerators are really around 30" deep when accounting for the doors (the "cabinet-depth" term only applies to the refrigerator box/carcass and does not include doors & handles)
Ranges and ovens usually stick out 27" to 29"

Regarding minimum aisle widths...From the NKBA info that Mama Goose posted above:
For a one person (and always a one-person) work aisle, 42" is the minimum width
For a Kitchen with more than one person working an an aisle, 48" is the minimum width
For a walkway with no work space, appliances, cabinetry, or seats 36" is the minimum
For seating with no work space, appliances, or cabinetry behind the seats, 44" is the minimum. (If it's a dead-end, i.e., against the wall on one end so no outlet or through-traffic possible, 36" to squeeze by.)
For seating that does have one or more of work space, appliances, or cabinetry behind the seats, 54" or more, depending on how much traffic is also passing through.
Between a table and island/peninsula with seating, a minimum of 60"
