You need to mark the sink placement in the plan to discuss further.

Chimney , in modern kitchens is a good thing to have. However many folks don't end up using it eventually due to different reasons so take an informed call.

Heavy duty exhaust is not for home use as it makes a lot of noise.

You can takan informed call between one time change vs long term issues.

In the current placement (in all likelihood) because of the wind circulation the smoke will come inside with the wind thn going out.

Secondly your sink is visible from the living area. You may have to keep it sparkling clean.

In the current set up refrigerator can come opposite to the hob followed by a tall pantry unit.

Keep the above in mind and take your call.
