Advice needed on toe-kicks under kitchen cabinets.

We have had modular kitchens in the past, without the toe-kick strip at the bottom. Current contractor has designed a toe-kick into the new kitchen. Ply base I believe. I’m not familiar on how it’s done - I’m told that they are fixed. In the past, without the toe-kick, we’d easily just pull-out the full trolley and clean at the back and the floors. Is it easy to take the trolleys out with toe kicks? Is it hygienic to have it installed? Does hair, dirt and dust get accumulated under the counters through the gaps? Mainly is it advisable to have toe-kicks? Is it sanitary? I need some insight on this please! 😊
