I am guessing that you want some kind of separation between dining room and kitchen? You want to keep steam and any oil in the air, from cooking, out of the dining room, stopping it at the ceiling with a wall but keeping the dining room open so the light from the large kitchen window can filter into the dining space? If I am right, the shape of an arch would best match the architecture of your house or of these rooms. An arch is an architectural element as well as a design element. It is possible though that an arch will be totally out of place in your space when a cleaned lined separation would look very nice. Hard to tell. Can you post a picture or give some verbal detail about the style of your spaces?

my house is also going through the construction stage from past six month's I used clay red bricks instead of using cement blocks & bricks as my architect & structure engineer both adviced red bricks keep 3 to 4 degrees temperature down in summer & plastering of wall is more convenient & long life on red bricks, comparing to cement bricks , cement bricks are easily available nice in size ,shape, strong & sturdy hence there is very low waste comparing to other materials

One should clean their kitchen once in a week whether your own or commercial.Choosing flooring for a kitchen is a very important decision.I think hardwood flooring would be nice options for commercial kitchen as it is easy to maintain. Porcelain and ceramic tile would be an ideal for commercial kitchen.For better advice you should contact with interior designer.
